Edinburgh has no shortage of cocktail bars. Some focus on theatre, some on classics, some on atmosphere. Over the years, working behind bars and visiting many more, I’ve started to notice that the places people remember are rarely defined by one thing alone.

Every cocktail should have a reason to exist. It should bring something different to the table, whether that’s a flavour profile, a technique or simply a feeling.


When I see a menu where no two drinks feel the same, I know the bar cares about what it’s doing.

I’ve always believed that guests shouldn’t feel like they need a lesson in mixology just to enjoy a drink. If a cocktail is well made, it should make sense from the first sip, even if you can’t quite explain why.

Some nights call for a quiet martini. Others call for something playful and unexpected. The beauty of Edinburgh is that you don’t have to choose one style over the other.

For me, a great cocktail bar is not defined by awards or trends. It’s defined by how it makes people feel.


It’s the moment when a table is full, conversations are flowing, and drinks arrive that surprise you in the best possible way. It’s the feeling that someone has thought carefully about what’s in your glass and why it belongs there.
